Roasting pecans in a tiny oven, Jack Frost doesn't get this far south...
I spent most of the day Sunday on my feet in our shoebox kitchen, doing my own version of holiday baking. Two largish batches of cheese biscuits later, I have about five tins of Christmas goodies to spread the joy. Or rather, I did until I shipped a couple of tins off to the relations in parts hither and yon. Food makes a great present when you're uncertain about what else to send.
I changed the recipe again this year to make the dough easier to manage. I realized that what was needed wasn't more butter in proportion to the flour, but rather some moisture to keep it all together. (I think I'm getting the hang of this food science stuff.) I still don't see how 4 cups of flour could have been combined with two sticks of butter to make anything but buttery sand; it just doesn't cohere. So this time I went for two cups of flour and some small amounts of apple juice (yeah, apple juice), applied with a spray bottle, and then rest the dough in the fridge to soak up the moisture. I'll get that recipe posted once I have it written up.
Looking forward to getting on the road and making it a nice long holiday break in Atlanta. It's been a helluva year, and from the looks of things, this next one will be equally interesting.
